Location: Swally n Scran, Kirkcudbright Reports to: Head Chef & General Manager Hours: 45 Hours/week (negotiable) About the Role West Coast Sea Products are looking for an experienced and passionate Sous Chef to join the kitchen team at Swally n Scran our growing, community-focused seafood restaurant thats quickly becoming a local favourite. The successful candidate will be working primarily in our restaurant Swally n Scran under the Head Chef. This exciting new role is ideal for someone with experience in the cheffing industry with an ambition to grow and develop in a fast paced, ever-developing environment. Kitchen & Food Service Work closely with the Head Chef to deliver an exciting and consistently high-quality menu. Cook and serve food in Swally n Scran alongside the Head Chef. Prepare food prior to service in line with operational procedures. Ensure all food is heated and served according to food safety guidelines. Lead food service during the Head Chefs absence. Maintain strong quality control with excellent taste, presentation, and consistency. Kitchen Standards & Maintenance Keep the kitchen clean, organised, and fully operational at all times. Report any issues, faults, or maintenance needs with equipment to the manager promptly. Complete all required record keeping, including temperature logs and cleaning records. Additional Duties Assist in producing existing ready-to-heat products and seafood platters for the fishmonger services. Support the Skippers Scran Van team once operations resume at Easter. Participate in occasional public and private events, both on-site at Swally n Scran and externally. Manage unsold produce responsibly to achieve zero to minimal waste. Plate and serve McCakers Desserts to a high presentation standard. Essential Skills: Assistant chef experience in a busy working environment Customer service skills we operate as an open kitchen. All chefs and assistant chefs will be serving customers directly. We pride ourselves on offering a friendly service. To uphold our business reputation good customer service must be at the heart of all employees Strong communication skills the ability to take and give direction when necessary, communicate effectively and politely with colleagues to ensure work is done fairly and efficiently. An enthusiastic individual who wants to thrive and be a part of growing the business Self-starter who is trustworthy, reliable and able to adapt to change Passion for cooking, eating and a good knowledge of seafood Desirable Skills: UK driving licence with no major endorsements.
